  1. Prepare the dough: In a large bowl, combine the plain flour, baking powder, and salt. Add the melted ghee and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs.
  2. Gradually add water and knead into a firm, smooth dough, similar to the consistency of chapati dough. Cover the dough with a damp kitchen towel and let it rest for at least 30 minutes.
  3. Heat the oil: In a deep-frying pan, heat the oil over a low flame. Do not heat the oil on a high flame.
  4. Shape the khajali: Knead the rested dough again for a couple of minutes. Divide the dough into equal, golf-ball-sized portions.
  5. On a clean work surface, flatten one dough ball. Using your fingers, gently press it into a disc about 1/2 cm thick. Use your fingertips to make a couple of holes in the center of the disc to ensure it cooks evenly.
  6. Fry the khajali: Gently slide the flattened khajali into the low-heat oil. Fry on very low heat until you see it become flaky and turn a light brown color. Fry only a couple at a time to avoid overcrowding the pan.
  7. Once fried, remove the khajali with a slotted spoon and place it on a paper towel to drain excess oil. Let it cool completely. The khajali will become flakier as it cools.
  8. Prepare the masala: While the khajali cools, mix all the masala seasoning ingredients together in a small bowl.
  9. Season and serve: Sprinkle the masala mix over the warm khajali. Toss gently to ensure each piece is coated. Serve the crispy, flaky khajali with a cup of masala chai.
