- Prepare the dough: In a large bowl, combine the plain flour, baking powder, and salt. Add the melted ghee and rub it into the flour with your fingertips until the mixture resembles coarse breadcrumbs.
- Gradually add water and knead into a firm, smooth dough, similar to the consistency of chapati dough. Cover the dough with a damp kitchen towel and let it rest for at least 30 minutes.
- Heat the oil: In a deep-frying pan, heat the oil over a low flame. Do not heat the oil on a high flame.
- Shape the khajali: Knead the rested dough again for a couple of minutes. Divide the dough into equal, golf-ball-sized portions.
- On a clean work surface, flatten one dough ball. Using your fingers, gently press it into a disc about 1/2 cm thick. Use your fingertips to make a couple of holes in the center of the disc to ensure it cooks evenly.
- Fry the khajali: Gently slide the flattened khajali into the low-heat oil. Fry on very low heat until you see it become flaky and turn a light brown color. Fry only a couple at a time to avoid overcrowding the pan.
- Once fried, remove the khajali with a slotted spoon and place it on a paper towel to drain excess oil. Let it cool completely. The khajali will become flakier as it cools.
- Prepare the masala: While the khajali cools, mix all the masala seasoning ingredients together in a small bowl.
- Season and serve: Sprinkle the masala mix over the warm khajali. Toss gently to ensure each piece is coated. Serve the crispy, flaky khajali with a cup of masala chai.
