- Prepare the dough: In a large bowl, mix the flour, salt, baking powder, and baking soda. Add lukewarm water slowly to form a soft, smooth dough, then knead it well.
- Create the special dough base: Divide the dough into three equal parts. In a small pan, heat the 45 ml of ghee with the 60 ml of water.
- Combine the doughs: Crumble one-third of the dough into the heated ghee and water mixture. Cook and mix with a spatula until it is fully incorporated. Remove from the heat and let it cool slightly.
- Knead the dough again: Add the cooled ghee-and-water dough mixture to the remaining two-thirds of the raw dough. Knead until everything is combined and the dough is smooth.
- Shape the khajali: Make small, bite-sized balls from the dough. Press lightly on each ball with your palm and make a hole in the center with your finger.
- Deep-fry: Heat oil in a deep pan over medium heat. Deep-fry the khajali until they turn golden brown and crispy. Be sure to cook them slowly so they crisp up all the way through.
- Drain: Remove the fried khajali from the oil and place them on a paper towel to drain excess oil.
- Add the masala: While the khajali are still warm, mix all the masala topping ingredients together in a small bowl. Sprinkle the mixture evenly over the fried khajali.
